Zanzibar Pizza

This is what prompted the post on our travels to Zanzibar. Using the recipe in A Taste of Zanzibar by Zarina Jafferji, a recipe book bought while in Zanzibar and a bit of googling, we were able to have an approximation of Zanzibari pizza for dinner tonight.

The dough is very simple, just flour and water. The balls are coated in oil.
Press or roll out the dough thinly, and top with cooked ground beef seasoned with garlic and ginger. The Zanzibari chefs put the egg last but I just make a mess, so I put the egg in a hole in the ground beef.
Then top it with onion – I also sneaked in some cream cheese based on an article I read. There was no cheese in the ones we had while in Zanzibar.
Then add the greens. I used lettuce in place of cilantro since I didn’t have any. Also left out the chopped chillies / hot sauce so the kids could apply to their liking.
Wrap it all up.
Cook it and devour!

Felix doused his pizzas with homemade mayo.
